Hi Sam,
I think it makes sense to use one land use if everything falls within the description. You could use a land use like 821 - Shopping Plaza (40-150ksf) for something like this. I haven't had a chance to put much time into it to determine if that indeed would be the best one but it's definitely one I would look at if trying to come up with one that represents a mix of commercial uses on a site.
